Will I be able to use the Wii Racing Wheel and the Wii Keyboard with only one USB Dongle?

Nope, sorry! But you can use a USB hub off of your Wii, freeing up more USB ports on your console. I'd make sure you use a powered hub as well, as that tends to be a more convenient option for stationary devices.
