Waiting for the harmony remote to switch activities is annoying, and it often changes the input on my receiver and TV from the correct input to the incorrect one, depending on what state my kids left the input on. 

I would like to disable all commands sent when I switch from one activity to another - how do I do this?  I will turn on the TV, receiver, switch them to the correct input, etc myself - it is much faster and more reliable.

Here are my activities

1) "Watch DVD" - want remote to control PS3 except for sound volume through the receiver.  This works perfectly, except I hate the 20 second delay when switching activities as it tries to power on the PS3, the receiver, the TV, switch the receiver input, etc.   It is especially annoying when the input was already correct and the remote changes the input to the wrong one.

2) "Watch TV" - want remote to control my windows media center except for the sound which I want through the receiver.  Again, this works perfectly except I hate waiting and it will switch to the wrong input if it starts on the correct one.

Not possible. You need to get a standard universal remote. Many can be had for around $20 USD or so that work the way you want.
