Where can I find a description of what all the icons do on all the screens on the Harmony Remote App for iPhone - I can't figure out what some of them are supposed to do or how to program them...

There is no list that I know of but they correspond to the same buttons on the Revue keyboard.
Whatever you program the Keyboard buttons for will transfer over to the Harmony App as well.
